24 *UPDATED*

Apparently, I need to start watching 24.  Like. Now.  Every site I go to, okay, almost every site is about 24.  I think I saw the first episode ever and I haven’t watched it since.  But I should, right?  Like. Now.  Right?  Oh and apparently Jack Bauer is totally awesome.  Right?  That’s what I’ve heard.  It’s crazy that I even know the man’s name.  (that is his name, right?)  I did say I wanted to watch more TV when I listed my goals for 2007, right?  And 24 should be on the list, right?  Okay, I’ll start.  Soon.  Maybe in March. 

Speaking of my goals.  My purse is still a total disaster area, full of receipts.  Ridiculous.  How do you people do it?  How do men not have purses, where do they put their receipts?  Oh, you’re right.  They put them right on the kitchen counter, or on the living floor and sometimes in the bathroom.  Of course, they do.   That and they really don’t do any of the shopping, well, sometimes. 

Also on my list of goals:  Turning 30 gracefully.  I’m really going to try, but as the date approaches I keep remembering how much I enjoyed my twenties.  Getting married.  Living in a high rise in Chicago.  Sleeping.  Resting.  Watching TV.  Having children.  Buying our home.  You have to admit, the twenties were good.  Here’s hoping my thirties will be better.

This afternoon I am takingRacecar to the doctor because he says his ears hurt.  He’s been saying it for awhile, but because he exhibits no other symptoms of an ear infection I’ve been reluctant to waste another $20 take him in.  But, it’s been almost 2 weeks, so it’s time.  Nothing like taking two toddlers to the doctor’s office.  I could almost pee myself with this excitement I am feeling.

Oh and one other thing.  EAT EAT EAT EAT EAT EAT EAT.  I can’t stop eating today.  Maybe it’s because I’ve had at least 2 pieces of birthday cake everyday since Saturday, but I’m going to Florida in a month and I need to stop this eating.  On Friday.

*Noah does, in fact, have an ear infection.

Simply Lasagna

As promised, once again.  A new recipe for you!  This is not a Weight Watcher friendly recipe…but it is DELICIOUS and very easy!  We had company over last night and we ALL gave it five stars! As far as lasagna goes, it was quite easy to make!

Simply Lasagna

ground beef

cups

KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided

container
(15 oz.)
POLLY-O Natural Part Skim Ricotta Cheese
1/2
cup

KRAFT 100% Grated Parmesan Cheese, divided

1/4
cup
chopped
fresh parsley
1

egg, lightly beaten

(26 oz.)
spaghetti sauce

cup

water

lasagna noodles, uncooked

PREHEAT oven
to 350°F. Brown meat in large skillet on medium-high heat. Meanwhile,
mix 1-1/4 cups of the mozzarella cheese, the ricotta cheese, 1/4 cup of
the Parmesan cheese, the parsley and egg until well blended; set aside.
DRAIN meat;
return to skillet. Stir in spaghetti sauce. Pour water into empty sauce
jar; cover and shake well. Add to skillet; stir until well blended.
SPREAD 1
cup of the meat sauce onto bottom of 13×9-inch baking dish; top with
layers of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1
cup of the meat sauce. Repeat layers two more times. Top with remaining
3 noodles and the remaining meat sauce. Sprinkle with remaining 1-1/4
cups mozzarella cheese and remaining 1/4 cup Parmesan cheese. Cover
tightly with greased foil.
BAKE 45 min.  Remove foil; continue baking 15 min. or until heated through.  Let stand 15 min. before cutting to serve.

I feel this need to check in with all of you after our Weekend O’Birthdays.  We celebrated bothAriel andRacecar’s birthdays this weekend.  (Noah turned 3 on the 20th,Ariel turns 4 on the 25th)  I am exhausted and elated.  Everything went so well.  Food was good, cake was great, kids were fantastic, but the best part was spending time with our incredible family and our amazing friends.  What a great, great feeling to know we are surrounded by such love.  And The Bears are going to the Superbowl.  What a weekend. 

On Saturday, we had a birthday party with friends and it was fantastic, all of the kids get along so well.  What aDsc03766
treat.  I can’t believe my children are so old, I could actually sit and enjoy my company, it’s been along time coming!  Tonight, one of my very best friends (my soul sister for 14 years) and her family are coming to celebrate her 30th birthday, which falls on Wednesday, and the kids’ birthdays.  Yesterday we celebrated with my side of the family and Brian’s side of the family.  (and we watched the game, of course!)  It will be a week full of celebrations.  And there is so much to celebrate. Ariel’s birthday on Thursday will include pizza, cake, a trip to Build A Bear (for her andRacecar) and….getting her ears pierced.  I’m freaking out about that, but she wants it and I feel she is ready.  (I don’t really think she’ll go through with it, we shall see!)

So, now I’ll return to my re-cleaning and taking all of the toys out of the packages and trying to find them a new home in our already cramped quarters.  It rained "Cars The Movie" and "Princesses" at our house.  The kids are in heaven! 
Hopefully tonight I’ll post again with alot more pictures…so many were taken.  Until then I’ll soak in the gift of my children.  It’s my favorite time of year!  They are both the same age!  (until Thursday!)

Racecar turns three!

3 years ago right now, I was showering.  I had to be at the hospital at midnight, I was scheduled for a c-secion the following morning.

My littleRacecar.  My little Racecar sweetie, turns three tomorrow.  So old.  So quickly.  He is one of the most lovable children, he hugs me tightly and groans slightly when he does it, he says "I love you" whenever we kiss or hug or sometimes when he just lays next to me he looks at me and says "I luff you, Mommy."

has thinned out and become tall, such a boy.  He’s a fantastic eater, he loves his veggies and his fruit. Racecar will easily turn down a Munchkin, he’ll hold the same one in his hands for a long time, like 30 minutes and then finally he’ll say "no thank you, you eat it."  (and we always do.)  Almost every morning, he eats half of his breakfast, goes and plays with his cars and returns to the table to finish every bite of his food, not to mention always drinking the milk out of his cereal bowl.

Luckily,Racecar loves his sleep, which was not the case as a newborn.  He did not sleep through the night until he was six months old.  To
this day, he goes into his room at bed time, turns off his light, turns on his fan and heads to bed. (but not without a story–he LOVES to be read to, especially at nighttime.)    And naps are just as luscious.  He needs a nap, he loves his naps.  The best part of his naps are when he wakes up and says "I’m a good sleeper!  (which means get me out of this bed!)  He snuggles for the first 10 minutes after waking up, it’s a highlight of my day.

Noah, err, I mean, Racecar does have his less than gentle side of him.  It’s definitely "his Dsc02152
way or the highway" (which we are constantly working on)   He likes things his way, and if he wants to be left alone, he’ll simply point in the opposite directions and tell you to go "that way."  At night, before I go to bed, I always visit the kids while they are sleeping for a few more kisses and cuddles.  Occasionally,Racecar wakes up and sees me and he’ll hug me and on more than one occasion, he woke up annoyed and told me to go to the bathroom.  It was hilarious.  He has a passion for Hot Wheels or Matchbox cars, he loves them.  And on most days, he willingly shares with his big sister, whom he adores.

Noah was not a planned pregnancy.  We found out I was pregnant withRacecar whenAriel was just four months old.  Imagine our surprise and fear.  WithRacecar, God has proven that there are no accidents.  Everything that happens is meant to be.  He is our gift, our love, our Racecar.  I often think about how hard I cried when I found out I was pregnant, now the tears I shed are tears of joy.  How could a mother be so blessed to have such wonderful, beautiful children.  Brian describesRacecar as "happy, energetic and oh so cute."  I could not have desribed him better myself.

“I’m not being rude”

Simon has been saying that alot, don’t you think? 

I finally just finished watching the FOUR hours of American Idol.  And it’s just painful to watch, don’t you think?  I can’t hardly stand it.  This blogger feels exactly the same way I do.  What she says is exactly what I was thinking while watching the crazy tonedeaf strange different people.  What are they thinking when they’re standing in line, waiting to try out?  How do they really think they have a chance?  I’m sure there are people who are just goofing off and trying to get on TV, but some of them, or Lord, some of them really think they can win.  The entire competition.  I’m disturbed by these people, while watching them I’m trying to figure out who their parents are, or what type of upbringing they have, or exactly who told them they could sing?  Brian laughs hysterically.  The only time I found myself laughing is when people used the wrong door.

One of the most disturbing contestants was Darwin, I wanted to crawl under my couch and cover my ears and eyes, but, like a car accident on the side of the road, I couldn’t turn my eyes, or even blink.  I watched her segment last night, and I’m so disturbed by her presence and her Mom’s belief that she could sing, that it has stuck with me ALL DAY.  Maybe that’s why I couldn’t get any work done.

oh, there were so many more, but I can hardly bear to subject you or myself to any more tragedies.
