Chicken Noodle Awesome

I created this particular recipe, I’m serious, I did!  I took a couple of different chicken noodle soup recipes and combined them and created this recipe which is the easiest soup recipe you will ever, ever make.

I’m serious.  It’s so easy that while it’s cooking, you are going to email me and say “THAT WAS SO EASY!”

And it’s so good, that you are going to call me and say “OMG, Beth, that was amazing, you smart, beautiful person, you.”

Okay, so maybe not, but I’m serious, it’s good.

Here is what you need:

chicken soup ingredients

Egg noodles (I have found this particular kind, pictured above, near the deli section at my local grocery store)
1 pound of chicken breast
carrots
celery
5-7 cans of chicken broth
1 can vegetable broth
ground oregano
salt & pepper

and a CROCKPOT.

Did you notice something about my ingredients list?  I do not have many amounts listed, the reason?  You can make this recipe as soup-y, chicken-y, carrot-y and oregano-y as you want.

So…I’m going to share with you how I make it and you can do with it as you will.  Mine ends up pretty thick with a lot of oregano.

First things first, place your chicken breast in the crock pot, season with pepper and oregano, add a can of  chicken broth, turn your crock pot on.

Head over to your cutting board and start chopping your celery and carrots.  Chop them up however you’d like, big or small and cut up as many you’d like!  I like a lot!  (feel free to do this step the night before!)

Add your vegetables to the chicken and cover with with one can of vegetable broth and three cans of chicken broth.  Add 1/2 teaspoon of oregano to the mix.

Let cook on a low for a few hours.  I start the process, typically around 8:45 in the morning and let it cook on low until 3:30 or so.

About 90 minutes prior to dinner time, I shred the chicken using two forks, it should shred perfectly.  (this could really be done much earlier, the chicken actually cooks quite quickly.)

Once your chicken is shredded, add your egg noodles and another 1/2 tsp of oregano and this time add a fair amount of pepper.  If you’d like the soup more soup-y, add another can of broth.

If in the end if it’s too thick and you’ve run out of broth, you can even add water!

Cover and let cook for an additional hour or so.

(I am CERTAIN you could add all of the ingredients first thing in the morning and head out to work and come home to some awesome soup, I just haven’t done it that way because you’d need to cut your chicken first and I do not enjoy cutting raw chicken…so I do it this way, so it’s easy to shred.)

In the end, taste your soup, add seasoning (I always seem to add more oregano), if you feel it’s lacking, and enjoy!

It is so, so good.  I promise you!  I have made this many times for other people, each time receiving rave reviews!

*special note about salt.  I do not add salt to anything but think some may like salt added, so I added it as an ingredient.  I can tell you, it’s not necessary!

    I have been looking for a chicken noodle soup recipe for the past week, and this is the one I am going with. I LOVE using my crock pot, and I also hate cutting raw chicken. Anything that requires it is not something that I make. So thank you for this recipe! Can’t wait to try it!

    this ROCKS! for two reasons! first, its done in the crock pot and i LOVE my crockpot! second, there is no de-boning {shudder} chicken involved. every recipe i ever get for homemade chicken noodle soup requires cooking a whole chicken and de boning it, which just typing that made me throw up in my mouth a little. can’t wait to try this!!!

    I LOVE Yoder’s noodles….we have them around here too. My mom makes her own noodles that are just like these…but better. Who has the time? My mom, I suppose. I go for the pre-made ones like you …the ones in the freezer are good as well. Kluskys I think. Enjoy your yummy soup…great time of year for this.

    this sounds wonderful – I just had some homemade chicken noodle soup that had dillweed in it & it was SO good! I would’ve never thought to put dillweed in chicken soup!

    I’ve even learned that if you don’t like celery, celery salt works really well!!! And a little onion powder adds a little zing :)

    Yum! Very similar to what I make and everyone loves it!! I do use 8 bullion cubes with about 2 quarts water….same effect except it will be cheaper for you :) I like mine not so “soupy” so I add sour cream to it when it’s done cooking up…super good. I think I gonna add some carrots next time. Thanks for the recipe!

    That recipe looks great. Can’t wait to try it!! BTW….You need to use your Pampered Chef Mix N Chop to shred that chicken. It is so much easier. If you don’t have one I know where you can get one!!!!

    I love your recipe for chicken soup! Honestly, no soup recipe should EVER be much work! It should be a dump it and forgetit, kinda thing! So if there is a soup you wanna try, figure out the ingredients, just by taste, and dump it in and forget it! Taste later, you’ll be proud! Salt-Salt is always an issue! If you find you don’t need it (canned broth has quite a bit of salt/sodium in it, even the reduced sodium) then don’t use it, however, if you salt in the beginning, it goes further than salting in the end! Great great recipe Beth and thanks for encouraging us all to get out those crockpots and make dinner!!!

    Not sure if anyone mentioned this but this soup is VERY heart healthy – unless you drown sour cream and cheese in your bowl :-) . You can eat probably the whole crockpot in comparison to a slice of pizza! LOL.

    man, now i feel like a complete moron! every time i make chicken soup, i cut up and sautee the chicken first which is NOT a fun task (i HATE handling raw chicken)….i am SO glad to see that you CAN just put the chicken breasts in with the broth and let it go – and i’ve never used my crock pot for it so it will be that much easier….can’t wait to make this this weekend – soooooo much easier than my process!!!! and those noodles look very very yummy!

    My chicken soup is very close to yours. I also use the crockpot. I use a whole chicken and add a tablespoon of tomato paste. When I’m close to dinner, I pull the chicken out and shred it. I use elbow macaroni for the pasta and sprinkle with parmesan cheese. Your photos make me want some for dinner!!! :)
