A Weighty Issue

Dear Readers,

I am going to talk to all of you about my weight.  If you are not interested, I am sorry.  If you are interested, listen up.  If you are new to my blog from Tales from the Scales, welcome to my blog and good luck on the challenge.

I want to lose five pounds.  Doesn’t seem like much, but it’s the most difficult five pounds I’ve ever had to lose.

My history in a nutshell:

March 2004  208 lbs
January 2006  188 lbs
May 2006  155 lbs
May 2007 166 lbs
Today 163.8  lbs

During the May Day Weight loss challenge my weight actually rose to the 170′s, so the 163.8 is a wonderful thing.  Lately I have been experimenting with eating less per meal, but eating more frequently and I think that has made a HUGE difference.  It’s a wonderful thing not starving myself between meals.  I also started taking these vitamins from GNC that I think may be helping me, too.

It’s not so much that I want to lose five pounds, I would be happy staying this weight, if I could just start exercising to firm up my jelly belly and my bouncing arms and thighs, if I could discipline myself to workout to firm up to reduce my general bounciness, I would be a pretty happy girl.

Here are my goals for the Look Great in 2008 Challenge:

-Lose five pounds
-Get serious about exercise.

When I weighed 188 pounds in 2006, I can remember sitting down for dinner after making cheeseburgers and eating two burgers, very easily.  Too easily.  I could never imagine someday feeling totally satisfied with one.  But it did happen.  My portions have totally changed – it can happen.

Worth Sharing — Low Fat Chicken Enchiladas

I discovered a low fat recipe that was delicious.  My goal was to find a recipe that was low fat and that my whole family would enjoy.

And I found it.  I can see this recipe becoming a usual meal for us here, it was THAT outstanding.  If you love Mexican food and enjoy a little kick, Aye Caramba!, this recipe is for you.  I found this recipe at 3 Fat Chicks, I decided to try it because every comment left after this recipe was positive.

This recipe calls for shredded chicken.  A few years ago I learned a very easy way to make shredded chicken.  Simply add chicken pieces to boiling, I check the chicken after about 5 minutes and it’s always done by nine minutes.  I cut the chicken breast into smaller pieces so it’s takes a shorter period of time.  If you do it right, the chicken shreds easily with a fork!

Your Basic Delicious Ingredients.

Cheesy Chicken Enchiladas
Serves: 8

recipe ingredients


1 cup chopped onion
1 1/2 cups shredded cooked chicken breast
1 cup (4 ounces) shredded reduced-fat sharp Cheddar cheese
1 cup bottled picante sauce
3 oz. 1/3-less-fat cream cheese
1 tsp. ground cumin or chili powder
8 (6-inch) flour tortillas
1 1/2 cups bottled green taco sauce

recipe directions
Preheat oven to 350*F. Place a large nonstick skillet coated with
cooking spray over medium heat until hot. Add onion, and saute 6
minutes or until tender. Add chicken, 1/2 cup Cheddar cheese, picante
sauce, cream cheese, and cumin. Cook 3 minutes or until cheese melts.
Spoon about 1/3 cup chicken mixture down center of each tortilla, and
roll up. Place enchiladas in a 13 x 9-inch baking dish; drizzle with
taco sauce, and sprinkle with 1/2 cup Cheddar cheese. Cover and bake at
350*F for 15 minutes or until cheese melts. Serve enchiladas
immediately.

Tomorrow at 10:30

I realized today that I never posted about my weight last week.   Interesting that it just slipped my mind, which makes me realize that maybe it’s not all that important to me…when it should be.  And will be, tomorrow at 10:30.

Last week I weighed the same as the week before and this week I lost 1.2 pounds from last week, which still makes me two pounds up from the lowest from the challenge, which means I’m not doing all that well. 

But you know, I did go on vacation for eleven days back in June (where I gained nine pounds.)  Isn’t that a good enough excuse?

No?

Move on, you say?

Alright, I will.  I AM GOING TO THE GYM TOMORROW!  Guess how I know?  Because at my gym, you have to schedule in advance if you want to come in with your kids, so you schedule it, but don’t you dare cancel because then you’re a jerk who made some retired woman come in on her day off just because your two kids set them over their legal child limit, so if you schedule it, you best find yourself at the gym when you said you would be there.

I called today and I’ll be there at 10:30.  Pray for me.

I’m actually pretty motivated right now.  My sister, Amy, called me today and she was all like "I joined Weight Watchers yesterday, and went food shopping for healthy good stuff and I ran yesterday and pushed myself really hard."  I was all like "OH YEAH, BIG SHOT?  WELL, I DRANK PEPTO BISMOL THROUGH A STRAW AND HAD TWO VENTI CARAMEL FRAPPUCINOS AND THE MOST EXERCISE I DID WAS MOVING MY SPRINKLER AND BRUSHING MY TEETH!!"  I reacted that way because I was totally jealous (and very proud of her!) and now I’m going to be just like her and eat right and exercise and EVERYTHING!

Starting at 10:30 tomorrow.

I’ll be sure to not work my fingers and forearm muscles to hard, I’d hate to be too sore to blog.

Is it a good sign or a bad sign when I step on the scale on my weigh in day and this is what it reads…

ERR.

I’ll take it as a good sign.  A sign that I lost so much weight that my scale broke in shock, disbelief and pure pride for it’s only user.

or whatever.

I have lost a considerable amount of weight since last Wednesday.  FIVE POUNDS, PEOPLE.  FIVE ROCKIN’ POUNDS.

However…I’m still up almost four pounds from my low four weeks ago.  Which means I have gained in total…let’s see.  carry the four, divide the seven, subtract the nine, multiply by six, take the radius and divide by nine.  A total of ELEVEN BILLION POUNDS.

You do the math people, I gained a TON of weight.  So, much that I can’t even say how much to you because it’s crazy.  But seeing as how I have lost five pounds of it this past week, I’m not sure how much of that gain was actually trying to attach itself to my thighs or was traveling around in my body for fun.

Who knows?  Either way, I have a lot to do today.  My sister and her kids are visiting and Brian is going out of town for six thousand days (or until Monday) so I need to clean my house RIGHT NOW and get ahead of the game.

But most importantly, I need to work off the four pancakes I just ate.
